The Premier Asian Cook’s Knife is a light, nimble Japanese equivalent of the Chef’s Knife. A fantastic all-purpose knife, the Premier 7-in. Asian Cook’s Knife is ideal for working with meat or fish and also preps veggies beautifully. Steeped in the great tradition of Japanese blade-making, Shun’s Premier series of handcrafted blades calls to mind the hand-forged blades of ancient Japan. All blades in the Premier series feature a hammered tsuchime finish to reduce drag, a cutting core of Shun’s proprietary VG-MAX super steel, Damascus cladding to support the core and a contoured walnut PakkaWood handle. Each Shun double-bevel blade is sharpened to a cutting angle of 16 degrees each side for optimum sharpness and durability. At every stage of the more than 100 individual handcrafted steps required to make every Shun blade, highly-skilled artisans fuse centuries of tradition with the latest technology and the most advanced materials, making every blade a functional piece of art.
Known as the ‘gyuto’ in Japan, the Asian Cook’s Knife is the Japanese equivalent of the chef’s knife; light and nimble to beautifully process meat and fish; also performs well on vegetables
Narrower than a traditional chef’s knife, yet with plenty of knuckle clearance on the cutting board; a go-to knife for a wide variety of kitchen tasks; handcrafted by skilled artisans
From Shun’s Premier series; reminiscent of hand-forged knives from ancient Japan; crafted from advanced, industry-leading materials in over 100 individual steps; VG-MAX super steel core, fine-grained, strong, hard
The very fine grain of Shun’s proprietary steel allows the blade to take and hold a razor-sharp, precision edge; layered Damascus cladding supports the core and adds stain resistance
A hammered ‘tsuchime’ finish acts as hollow-ground indentations to release food more quickly from the blade and reduce drag while chopping, slicing, dicing, mincing, and cutting
